Beth, our Nutrition Director has come up with a delicious Tomato roasted pepper soup recipe you can make. You can also try one of our High Protein Soups, including Cream of Tomato, Cream of Chicken, and Chicken Pasta.
2 large organic red bell peppers 3 lbs tomatoes or 28 oz organic canned tomatoes 4-5 basil leaves or 1 teaspoon dried basil Canola spray
Half and seed peppers. Spray with canola spray and roast on the grill or in the oven on low broil until soft and slightly brown. Let cool and puree and place into a pan. If using fresh tomatoes, dice and cook with basil until soft. Puree and add to pureed peppers. If using canned tomatoes puree with basil and mix with pureed peppers. Heat on low until hot. Garnish with sour cream and onion Crunch Os and or fat free mozzarella cheese. Crunch Os are great as a crouton in a salad too.
